Buttafuoco dell’Oltrepò Pavese DOC is a traditional red wine from the hilly landscapes of Oltrepò Pavese, in southern Lombardy. Its growing area lies on the first foothills of the Apennines, where vineyards follow undulating ridges and valleys with south- and south-west-facing exposures. The soils are notably varied, combining clay and calcareous marl with sand, silt and gravelly components. This geological mosaic can retain moisture during dry spells while also encouraging gradual, even ripening. The climate brings together continental influences from the Po Valley and milder currents from the Ligurian side of the Apennines; altitude, slope and cooler nights help preserve freshness and aromatic definition.
The denomination is based on a blend of native red varieties, with Barbera and Croatina as its principal components. Barbera contributes vibrant acidity, juiciness and deep colour, while Croatina provides tannin, structure and dark-berry character. Uva Rara and Ughetta, also known as Vespolina, may complete the blend, adding floral lift, spicy nuances and further complexity. In the vineyard, attentive site selection, balanced vine vigour and full phenolic maturity are essential, particularly for Croatina, whose skins play a central role in shaping the wine’s structure.
After harvest, the grapes are generally destemmed and fermented on their skins. Maceration length is adjusted to the character of the vintage in order to extract colour and tannins with concentration but without coarseness. Temperature control and regular cap management promote an even, refined tannic profile. The wine then develops through maturation in stainless steel, wood, or a combination of both, allowing Barbera’s acidity and Croatina’s firmness to integrate over time.
The name Buttafuoco is linked to local winegrowing tradition and to the idea of a particularly fiery, energetic red. Today, the DOC expresses a historic, place-specific assemblage in which the identity of Oltrepò Pavese emerges through the interplay of varieties and hillside terroir.
