Castel del Monte DOC covers the wine country of the northern Murge in Puglia, centred on the elevated limestone plateau surrounding Frederick II’s castle. Vineyards occupy an open, luminous and windswept succession of hills. Limestone-rich, frequently stony soils with clay components, good drainage and marked diurnal shifts shape the ripening cycle. Adriatic air currents provide ventilation, while elevation helps retain freshness and aromatic definition in the grapes. The climate is Mediterranean, yet winter coolness and dry summers give the wines a distinctive, more continental profile.
The denomination encompasses white, rosé and red wines, as well as varietal bottlings. Its key native grapes are Uva di Troia, also known as Nero di Troia, Bombino Nero and Pampanuto. Uva di Troia is the foundation of many reds, contributing dark berry character, spice, firm structural tannins and notable capacity for development. Bombino Nero is particularly associated with rosé wines, where it brings bright fruit, lively acidity and characteristic colour. Pampanuto produces pale, subtly aromatic whites marked by freshness and a mineral edge. Aglianico, Cabernet, Chardonnay, Pinot Nero and Sauvignon are also among the permitted varieties, used either as leading grapes or in blends according to the intended style.
Pruning and canopy management are designed to encourage even maturation in this dry, ventilated environment. Red winemaking ranges from brief skin contact for juicy, immediately expressive styles to longer macerations and wood maturation for more structured wines. Rosés are generally made through short periods of contact between juice and skins, preserving freshness and clarity of fruit. White wines are commonly fermented at controlled temperatures in stainless steel, sometimes followed by maturation on fine lees to build texture while retaining definition.
The denomination was established as a DOC in 1971. It brings together the long-standing viticultural tradition of the Murge with a landscape whose historical identity is closely linked to Castel del Monte and the cultural fabric of medieval Puglia.
