Cesanese di Affile DOC originates in the mountainous interior of Lazio around Affile, in the upper Aniene valley east of Rome. Vineyards occupy slopes and terraces in an Apennine landscape. Altitude, ample exposure and marked day–night temperature shifts encourage slow, even ripening. Soils are often stony, with calcareous and clay-rich components; their moderate fertility and natural drainage help produce concentrated fruit while retaining a vivid, well-defined acid profile.
The denomination is dedicated to Cesanese di Affile, a distinctive local variety within the Cesanese family and separate from the more widely planted Cesanese Comune. It forms the dominant component of the blend, while only limited proportions of other red grapes authorised in Lazio may be included. Cesanese di Affile generally gives small, compact bunches with dark-skinned berries, and reaches maturity relatively late in this cool, airy hill environment. Exacting vineyard work is fundamental: canopy positioning, controlled bud load and, where necessary, crop thinning, together with careful management of the fruiting zone and selective harvesting, seek full phenolic ripeness without sacrificing freshness.
The wine is made as a red. Following destemming and crushing, fermentation takes place on the skins, with duration and temperature adjusted to the intended style. Gentle pump-overs or punch-downs provide measured extraction of colour, aroma compounds and tannins. Maturation commonly begins in stainless steel to preserve varietal fruit and spice; more structured expressions may spend time in wood, generally with restrained use of oak so that the grape remains central. The wines are typically ruby-coloured, showing cherry and woodland berry notes, floral shades, Mediterranean herbs and finely assertive tannins that become more supple with development.
The DOC was established during the 1970s to safeguard the historic association between this Cesanese biotype and Affile. It therefore protects a longstanding winegrowing tradition whose character arises from a local grape, mountain-influenced climate and precise red-wine vinification.
