Cesanese di Olevano Romano DOC is a historic red-wine denomination from the hills of Olevano Romano, east of Rome, in the geographical setting of the Monti Prenestini. Vineyards occupy a landscape of ridges, small valleys and wooded slopes. Altitude, steady air circulation and marked day-to-night temperature variation encourage gradual ripening, helping the grapes retain freshness and aromatic definition. Soils are diverse, with calcareous, clay-rich and stony strata predominating; their drainage and variable water-retention capacity contribute to the wines’ structure, firmness and savoury nuance.
Cesanese is the leading grape and is represented in local vineyards principally by Cesanese Comune and Cesanese d’Affile. It must form the dominant share of the blend, while other red grapes authorised for cultivation in Lazio may be used in limited proportions. Cesanese is a late-ripening variety, generally marked by compact bunches and a refined phenolic profile that is particularly expressive in this area. It requires attentive vineyard management: balanced pruning, well-aerated canopies and careful control of crop load support even maturation and healthy fruit. Harvest is timed to achieve balance among sugar accumulation, acidity and the ripeness of skins and seeds.
Winemaking is centred on preserving the grape’s identity. After destemming, fermentation takes place in contact with the skins, with maceration length and extraction tailored to the vintage and intended style. Temperature control and gentle pump-overs or punch-downs allow measured extraction of colour, tannin and aromatic compounds. Maturation may take place in inert vessels to emphasize fruit clarity, or be complemented by restrained use of wood. The history of Cesanese in Olevano Romano is inseparable from the area’s long-established small-scale hillside viticulture. The DOC gives formal expression to this local knowledge and to the distinctive character of one of Lazio’s most individual red grape varieties.
