Mandrolisai DOC covers red and rosé wines from the central highlands of Sardinia, a historic winegrowing area set between Barbagia and the island’s interior mountain ranges. Vineyards are generally found on rolling or elevated sites, where weathered granite soils, often mixed with sand, clay and stones, provide effective drainage. The inland climate brings hot, dry summers, cool nights and marked diurnal shifts. Altitude and constant air movement encourage gradual ripening, helping retain freshness and aromatic definition.
Mandrolisai Rosso is defined by a traditional blend of Bovale Sardo, locally known as Muristellu, Cannonau and Monica. Bovale Sardo contributes tannic frame, dark fruit and savoury spice; Cannonau provides warmth, ripe cherry and plum notes, and body; Monica completes the profile with fragrance, softer tannins and lively acidity. These grapes form the essential core of the blend, with limited use of other authorised red varieties. A rosé is also made from the same local grape-growing tradition.
Many vines have historically been trained as bush vines, a system well suited to dry, windy conditions and demanding attentive work on each plant. Trellised vineyards are also used. Harvest decisions follow the individual ripening pattern of each variety, since their aromatic and phenolic maturity may not coincide.
In the cellar, red grapes may be fermented together or vinified separately before blending, generally with controlled temperatures. Skin-contact time is adapted to the intended expression: shorter macerations favour supple texture and fragrant fruit, while longer extraction builds deeper colour, firmer tannins and ageing potential. Maturation may take place in inert vessels, steel, concrete or wood; oak is used where appropriate to refine structure without obscuring the character of the blend. Mandrolisai embodies an old Sardinian blending culture, shaped by the union of three native grapes and a rugged mountain terroir.
