Orvieto DOC is a historic white-wine denomination of south-western Umbria, extending into neighbouring areas of Lazio. Its traditional heartland, known as Orvieto Classico, lies among the hills surrounding the tuff-stone city of Orvieto. The landscape is shaped by gently rolling slopes, the valleys of the Paglia and Tiber rivers, and the moderating influence of Lake Corbara. Volcanic tuff, clay, limestone, sand, and fossil-rich marine deposits form a varied soil mosaic. These conditions often combine mineral tension and freshness with ripe yet restrained fruit expression. Warm days, cool nights, and good air circulation on hillside sites encourage gradual ripening while helping grapes retain natural acidity.
The denomination’s identity rests on a blend in which Procanico, the local form of Trebbiano Toscano, and Grechetto play the leading roles. Procanico contributes brightness, linearity, and delicate floral notes, while Grechetto adds body, yellow-fruit character, and a subtly almond-like finish. Other permitted white varieties, including Malvasia, Verdello, Drupeggio, and Canaiolo Bianco, may complement the blend with fragrance, texture, and nuance.
Vineyard work focuses on parcel selection, well-ventilated canopies, and carefully timed harvesting. Earlier-picked fruit preserves citrus drive and crispness; later lots may provide greater ripeness and hints of honeyed complexity. Winemaking is generally based on gentle white-wine handling, prompt pressing, and temperature-controlled fermentation, commonly in stainless steel, to preserve precision and varietal definition. Some producers extend maturation on fine lees to add a broader, creamier texture, while oak, when used, is typically discreet. Alongside dry expressions, Orvieto has a long tradition of wines with measured residual sweetness. In favourable autumn conditions, selected grapes affected by noble rot can be used for concentrated, layered styles. Orvieto’s history is closely tied to medieval viticulture around the city and to the enduring reputation of its pale, refined white wines.
