The Provincia di Pavia Indicazione Geografica Tipica encompasses the winegrowing area of the entire Province of Pavia in Lombardy. Its geographical setting brings together three distinct landscapes: the calcareous, clay-rich and often marly hills of the Oltrepò Pavese south of the Po, the broad Lomellina plain, and the alluvial terraces around Pavia. The climate is shaped by the Po River, episodes of fog on the plain, and air currents descending from the Apennines. In the hill districts, exposure, elevation and efficient drainage create conditions particularly suited to gradual grape ripening.
The designation is deliberately broad in scope, covering white, red and rosé wines; still, semi-sparkling and sparkling styles; as well as sweet, passito and novello expressions. Important red grapes include Croatina, Barbera, Pinot Nero, Uva Rara, Merlot and Cabernet varieties. Key white varieties include Riesling Italico, Riesling Renano, Moscato, Malvasia, Pinot Grigio, Chardonnay and Sauvignon. The IGT also accommodates international grapes, whose character changes markedly according to soil and local climate.
In the vineyard, attention centres on matching varieties with site and aspect, managing the canopy, and timing the harvest with precision. In the warmer plain sites, picking decisions often seek to preserve acidity; on the hills, growers can pursue complete phenolic maturity. White grapes are generally handled with gentle pressing and temperature-controlled fermentation to retain freshness and aromatic definition. For reds, short macerations may be used for immediate, fruit-driven wines, while longer fermentations and maturation in steel, wood, or a combination of both can provide greater structure and complexity. Sparkling versions may be made through either tank fermentation or bottle fermentation.
Viticulture in the Pavia area has ancient roots and was further shaped by medieval monastic and agricultural traditions. Provincia di Pavia IGT now provides a flexible framework that connects this long wine culture with a broad range of contemporary stylistic interpretations.
