Recioto di Soave DOCG is a sweet passito wine from the historic white-wine hills east of Verona. Its production zone includes the volcanic and calcareous slopes of Soave and Monteforte d’Alpone, together with other authorised sites. Basaltic tuffs, weathered lava, clay and limestone create distinct expressions according to origin: saline tension, mineral depth, citrus brightness, or subtle spicy and almond-like notes. The continental climate is moderated by the influence of Lake Garda, while hillside airflow and marked day-night temperature shifts encourage gradual, aromatic ripening.
Garganega is the principal grape and must account for at least 70 percent of the blend. Its naturally loose clusters and relatively thick skins make it especially suited to drying, while its acidity can remain vivid even at advanced maturity. Trebbiano di Soave may be included to contribute perfume and freshness. Small proportions of other authorised white varieties can complete the blend.
The word Recioto refers to the “recie”, the outer, sun-exposed and ripest parts of the bunch. Historically, these prized sections were selected for concentrated sweet wines. Following a meticulous hand harvest, only sound, fully ripe grapes are dried in well-ventilated rooms. During this appassimento period, water evaporates and flavour compounds become concentrated, developing suggestions of dried apricot, candied citrus peel, honey, white flowers, spice and almond.
The dried grapes are gently pressed and the sugar-rich must undergoes a slow fermentation, often under temperature control. Fermentation is stopped before all sugar is transformed into alcohol, preserving the wine’s natural sweetness. Ageing is generally carried out in stainless steel to protect varietal purity, though wood and extended maturation may occasionally add further complexity. Recioto di Soave may be made as a still or sparkling wine, balancing its rich sweetness with the defining acidity and mineral character of the Soave hills.
