Torgiano DOCG identifies Torgiano Rosso Riserva, a distinguished red wine from the Umbrian hills surrounding the town of Torgiano, where the Chiascio meets the Tiber. Its vineyards occupy a gently undulating landscape shaped by river valleys. Clay, limestone, sand and alluvial deposits occur in close succession, combining water retention with effective drainage. The climate is continental, yet moderated by the river corridors. Warm, dry summers, marked day-night temperature variation and ventilated slopes encourage gradual, complete ripening while preserving acidity and aromatic definition.
Sangiovese is the foundation of the wine, providing structure, freshness, sour-cherry and violet tones, and an aptitude for extended development. Canaiolo has a traditional supporting role, softening the tannic profile while contributing darker fruit, spice and suppleness. Other permitted red varieties may be included in limited proportions, but they are intended to complement rather than obscure the Sangiovese character.
Viticulture aims for balanced vine growth and carefully managed ripening. Site selection on suitable slopes, row orientation, pruning and attentive canopy work all help to maintain healthy, open clusters. Harvest takes place only once phenolic maturity has been reached, an essential requirement for a denomination defined by depth, refined tannins and ageing potential.
Following destemming and fermentation on the skins, the young wine is made with controlled extraction. The duration of maceration is adjusted to the vintage and condition of the fruit, seeking colour, tannic substance and aromatic complexity without excessive hardness. Ageing is deliberately extended by the appellation rules, requiring at least three years of maturation, including time in wood and bottle. During this period, the vibrant fruit of Sangiovese and the spice of Canaiolo integrate with balsamic, earthy and tobacco-like tertiary nuances. Viticulture in Torgiano has ancient roots and was sustained through the centuries by rural and monastic traditions; Rosso Riserva represents its most concentrated and long-lived expression.
