Vin Santo del Chianti Classico DOC is the traditional sweet wine of the historic Chianti Classico territory between Florence and Siena. Its landscape of ridges, woods, terraced vineyards and varied elevations creates a climate of warm, dry summers, cool nights and a long, luminous ripening season. Soils are notably diverse: friable galestro, pale alberese, sandstone, clay and calcareous mixtures contribute freshness, mineral tension and aromatic definition.
The classic white style is based on Trebbiano Toscano and Malvasia Bianca Lunga, the grapes most closely associated with Vin Santo. Trebbiano contributes acidity, structure and a subtle savory edge, while Malvasia brings perfume, suppleness and notes recalling flowers, honey and dried fruit. Vin Santo Occhio di Pernice is centered on Sangiovese, producing an amber to garnet-hued expression with dried cherry, spice and nutty nuances.
Grapes are selected with care and, after harvest, are traditionally laid out to dry or suspended in well-ventilated rooms. During this gradual appassimento, sugars, acidity and aromatic precursors become concentrated. Following gentle pressing, the must is transferred to small, usually seasoned wooden casks known as caratelli. These are not filled completely and remain sealed for an extended maturation. Fermentation is slow and irregular, frequently aided by a resident yeast culture, known as madre, preserved in the cask. Oxidative ageing, evaporation and the wine's interaction with wood shape its characteristic golden to deep amber colour, viscous texture and layered bouquet.
Vin Santo has been linked for centuries to Tuscan rural and monastic traditions. In Chianti Classico, this patient method became a distinct expression of place, uniting freshness and concentration, grape character and long cask ageing.
