Vin Santo di Carmignano DOC is a historic sweet wine from the hills around Carmignano and Poggio a Caiano in Tuscany, where the Apennine foothills meet the Arno plain. Vineyards occupy a varied, airy hillside landscape. Galestro, alberese, sand, clay and gravelly deposits create a mosaic of soils with differing water retention and ripening conditions. Warm, sunny days, cooling nocturnal air currents and hillside exposures encourage slow ripening and help preserve the soundness, acidity and aromatic potential of the grapes.
The traditional white Vin Santo is based chiefly on Trebbiano Toscano, a variety valued here for its firm acidic backbone, structure and capacity for extended ageing. It may be complemented by other locally authorised white grapes, notably Malvasia Bianca Lunga, which contributes floral fragrance, supple texture and aromatic breadth. The denomination also includes Vin Santo Occhio di Pernice, a style shaped by Sangiovese and distinguished by its deeper colour and dried red-fruit, spice and balsamic nuances.
Appassimento is the defining stage. Carefully selected, fully ripe and impeccably healthy bunches are dried naturally after harvest, traditionally on mats or in well-ventilated rooms. This gradual dehydration concentrates sugars, acids and dry extract while developing the characteristic spectrum of honey, dried fruit, nuts and candied citrus. The grapes are gently pressed and the must is transferred to small wooden casks known as caratelli. Slow, often uneven fermentation and extended maturation in wood give the wine its viscous texture, oxidative complexity and layered bouquet. A portion of an established cask culture, known as madre, is often retained to guide fermentation and preserve a house’s stylistic continuity.
Vin Santo is rooted in Tuscan rural cellar traditions, where drying grapes and patiently maturing the resulting wine were long-established practices. In Carmignano, this heritage has evolved in close dialogue with the area’s distinctive soils, exposures and local grape-growing culture.
