Vin Santo di Montepulciano DOC is produced in the hills surrounding Montepulciano, in south-eastern Tuscany, where undulating slopes and varied elevations meet soils of clay, sand, limestone and fossil-rich sediments. A continental climate moderated by Mediterranean influences brings sunny autumn days, cool nights and steady air movement, conditions that support complete ripening and the healthy drying of selected grapes.
The traditional white Vin Santo is based chiefly on Trebbiano Toscano and Malvasia Bianca Lunga. Trebbiano contributes freshness, structure and a discreetly herbal core, while Malvasia brings fragrance, softness and ripe yellow-fruit nuances. Vin Santo Occhio di Pernice is centred on Sangiovese, which gives the wine its deep amber to garnet hues, a gentle tannic thread, and notes of dried red fruit, spice and nuts.
Grapes are selected with particular care and, after harvest, are dried for weeks or months in well-ventilated rooms. This appassimento concentrates sugars, acidity and extract while transforming varietal aromas. Only after drying are the grapes pressed. The must ferments very slowly in small wooden casks known as caratelli, which are traditionally left partly unfilled. A resident yeast deposit, called madre, may be retained in the cask and can help guide the prolonged fermentation and maturation.
Extended oxidative ageing in wood is fundamental to the denomination’s identity. It develops dense, layered wines marked by dried apricot, candied citrus peel, honey, nuts, caramel and sweet spice. Vin Santo is deeply rooted in the rural cellar traditions of Montepulciano, where the drying of the finest grapes and patient ageing in caratelli have been cultivated for centuries. The result is defined not simply by sweetness, but by concentration, freshness, oxidative complexity and the distinctive imprint of time.
