Agricola Paglione
Agricola Paglione is an organic farm in the Daunia region of northern Puglia, situated in the countryside around Lucera, between the Tavoliere delle Puglie and the Sub-Apennines of Daunia. Its identity stems from a direct agricultural relationship with the land, where vines, olive trees and other crops form a productive landscape characterised by seasonality, biodiversity and the continuity of traditional farming practices. The transition to organic farming, which began in 1994, is part of a vision centred on respect for the soil and care for raw materials.
In the vineyards, work follows the rhythm of the seasons, with pruning and leaf removal tailored to weather conditions, whilst crop rotation, green manure and mixed cropping help to preserve the balance and vitality of the soil. The context of the Cacc’e Mmitte DOC in Lucera, which encompasses the municipalities of Lucera, Troia and Biccari, reinforces the link with a local winemaking tradition in which the Nero di Troia grape variety interacts with other varieties historically present in the area.
In the winery, the approach remains consistent with this agricultural philosophy: careful selection of the grapes, gentle destemming and crushing, temperature-controlled vinification and spontaneous fermentation, without the use of selected yeasts. The absence of fining and filtration prior to bottling gives the wines a direct, textured and distinctive character, capable of conveying the essence of the Daunia region through reds with a fruity and spicy profile and whites characterised by freshness, savouriness and Mediterranean vibrancy.
