Cascina degli Ulivi
Cascina degli Ulivi is a biodynamic farm in the hills of Gavi, in southern Piedmont, near Novi Ligure and within the wine-growing landscape of the Alto Monferrato. Its identity stems from the concept of the farmstead as a complex agricultural organism, where the vineyard, soil, crops and livestock interact in accordance with a vision of natural agriculture. Biodynamic farming, practised for decades, guides work in the vineyard through the use of compost, preparations and attention to natural rhythms, with the aim of maintaining the vitality of the soil and the raw material’s inherent expressiveness.
The landscape is characterised by hills that are not easy to cultivate, but which lend character to the grapes: red, iron-rich clay; clay-limestone soils; sunny exposures; and the influence of sea breezes all contribute to producing wines with structure, tension and depth. Cortese, the main grape variety of the Gavi area, grows alongside traditional Piedmontese varieties and old vines, which strengthen the link between the landscape and the wine.
The winemaking approach prioritises fermentation and processing methods that respect the grapes as much as possible, producing biodynamic wines with no added sulphites that seek to convey a direct expression of the terroir. The result is a distinctive profile, where energy, substance and the terroir take precedence over any technical intervention, conveying an authentic and deeply agricultural vision of Piedmont.
