Cavallotto
Cavallotto has close ties to Castiglione Falletto, in the heart of the Barolo region, and finds its true expression at the Bricco Boschis Estate, a historic part of the Langhe where Nebbiolo takes on a character of particular depth. The winery’s identity stems from its direct relationship with its own vineyards and a production philosophy based on vinifying exclusively the grapes grown on the estate, with a focus on accurately interpreting the differences in soil, exposure and the characteristics of each vintage. The producer’s modern history is marked by a continuous presence on Bricco Boschis since 1928 and by the start of bottling under its own label after the Second World War – developments that have cemented a highly recognisable connection with Castiglione Falletto and the Barolo tradition. In the vineyard, the approach favours integrated and organic practices, with a focus on soil vitality, minimising invasive interventions and ensuring high-quality ripening. Careful pruning, selection of bunches and maintenance of the grass cover all contribute to a management of the raw material designed to produce healthy, balanced grapes that reflect the character of the terroir. In the cellar, the style remains faithful to a classic, terroir-driven interpretation: careful extraction, extended ageing periods and maturation processes that complement the structure of the Nebbiolo without overpowering it. Cavallotto’s wines thus express the depth of the Langhe marl, the tannic vigour and the aromatic tension typical of Castiglione Falletto, with an austere, crisp and evolving profile.
