D'Araprì
D’Araprì is a leading Apulian producer of Metodo Classico, based in San Severo, in the Capitanata region of Apulia, where viticulture thrives in a dry, sunny and breezy environment. Founded in 1979 with the aim of producing bottle-fermented sparkling wines in the heart of the northern Tavoliere, the project has forged its own identity by focusing primarily on Bombino Bianco, complemented by varieties such as Pinot Noir and Montepulciano, in the quest for cuvées that offer finesse, freshness and the potential for ageing.
The terroir plays a decisive role in shaping the character of the wine. The vineyards are situated in an area sheltered by the Gargano and Majella mountains, characterised by low rainfall, good ventilation and significant daily temperature variations. The calcareous-clay soils, containing silt and sand, promote gradual ripening, which helps to preserve acidity and aromatic compounds – essential characteristics for sparkling wines with a crisp, clean profile.
In the vineyard, the approach prioritises care for the raw material, with environmentally conscious practices, grape selection and cultivation using the Apulian pergola system, which is well-suited to the local climate. In the cellar, production follows the Metodo Classico, from the preparation of the base wines through to the second fermentation and ageing on the lees. The result is a distinctive style, characterised by a fine perlage, freshness, balance and an original interpretation of Apulian sparkling wine that reflects the region’s terroir.
