Hilberg Pasquero
Hilberg Pasquero is a Piedmontese producer based in Priocca, in the Roero region, in a hilly area situated on the south-eastern edge of the appellation. Here, the landscape – shaped by the proximity of the Tanaro river and the geological diversity of the hills – offers a particularly complex terroir: blue clay, marl, chalk and sand coexist in plots that yield distinct expressions of ripeness, freshness, structure and aromatic finesse. In this context, Nebbiolo finds depth and tension, whilst Barbera and Arneis interact with the fresher, brighter qualities of the Roero soils.
The winery’s identity is built around farming practices that prioritise biodiversity and a philosophy known as ‘bioergodynamics’, which combines observation of nature, agronomic expertise and sensitivity to the balance of the ecosystem. Vineyard management prioritises ground cover, care for slopes, protection of natural drainage and the selection of raw materials tailored to each individual plot. Even the choice of plant material focuses on continuity and resilience, with a focus on biodiversity within the vineyards.
In the winery, the approach remains consistent with the work in the vineyard: the processes are designed to guide the grapes with precision, minimising unnecessary intervention and optimising fermentation methods, containers and timing in accordance with the vineyard’s character. The result is wines with a crisp, mineral and dynamic profile, in which the Roero region comes through with elegance, natural energy and a distinctive terroir character.
