I Pastini
I Pastini is an Apulian producer based in the heart of the Itria Valley, in the area between Locorotondo and Martina Franca. Founded in 1996, it embodies a region with a strong agricultural identity, characterised by rolling hills, dry-stone walls, trulli and a wine-growing tradition historically linked to the white wines of Locorotondo and Martina Franca. The project focuses on the revival and promotion of the valley’s and Puglia’s traditional grape varieties, with a central role for Verdeca, Bianco d’Alessano and Minutolo, alongside red grape varieties such as Susumaniello and Primitivo.
The natural environment of the Itria Valley plays a decisive role in shaping the character of the wines: gentle slopes, constant breezes, Mediterranean sunshine and limestone soils promote balanced ripening and a fresh, fragrant and terroir-driven expression of the grapes. The winemaking approach prioritises the distinct character of the native grape varieties, with a focus on continuity between vineyard and cellar and on a clean, immediate yet nuanced expression of the landscape of origin.
In I Pastini’s wines, the Valle d’Itria’s aptitude for white wines really comes to the fore, characterised by citrus and floral aromas, savoury depth and balanced complexity, whilst the red wines round off the story with interpretations rooted in Apulian tradition. The producer thus helps to reveal the character of inland Puglia – luminous and limestone-rich – where the preservation of local varieties becomes a stylistic choice even before it is a matter of identity.
