Severino Garofano
Severino Garofano Vigneti e Cantine was founded in Copertino, in the heart of Salento, in a part of Puglia where Negroamaro is a central element of the region’s wine-growing identity. The winery interprets this indigenous grape variety through an approach that combines local roots with a contemporary sensibility, with a focus on Salento tradition, respect for nature and care for the raw materials. The Copertino area, linked to the appellation of the same name and the wider Salento region, offers particularly favourable conditions for growing Negroamaro: a warm climate, intense sunlight, good ventilation and soils capable of supporting full ripening without losing balance. In this setting, the ‘alberello’ training system and traditional local viticultural practices remain key points of reference for understanding the relationship between the vine, the soil and the landscape. The style of the wines prioritises the expression of the variety’s character: colour, aromatic depth, a spicy note and a typical hint of bitterness are interpreted in ways ranging from the freshness of the rosés to the structure of the reds. The winemaking approach celebrates Negroamaro not merely as a symbolic grape, but as a living entity, capable of translating the Salento region into wines with a recognisable personality. The result is a consistent range of wines, rooted in Copertino and dedicated to capturing the Mediterranean essence of southern Puglia.
