Sottimano
Sottimano is a Piedmontese producer based in Neive, in the heart of the Barbaresco region, where Nebbiolo finds one of its most recognisable expressions amidst the hills, varied exposures and soils capable of imparting distinct characteristics to each plot. The winery’s identity stems from a precise understanding of the crus: not merely as a geographical indication, but as the key to describing variations in structure, aromatic depth, freshness and tannic texture within the same appellation.
Work in the vineyard plays a central role and is based on respect for natural balances, guiding each plot from pruning to harvest with the aim of preserving the character of the terroir. The raw material is handled with selective care, making the most of grapes from the most suitable plots and keeping the different origins separate, so that each wine can retain its own terroir profile.
In the cellar, the approach remains consistent with a traditional, non-intrusive philosophy: spontaneous fermentation, long maceration, the use of the submerged cap and ageing in wood are all designed to highlight the character of the vineyard rather than the technique. Sottimano’s wines thus stand out for their combination of energy, precision and depth, with Nebbiolo at the heart of a stylistic language that prioritises finesse, persistence and a close connection to the Barbaresco landscape.
