Addoraca is a rare white grape variety from Calabria, historically linked to the province of Cosenza and, in particular, to the Saracena area, where its dialect name evokes the concept of fragrance. Its presence is documented in the tradition of Moscato di Saracena, an ancient passito wine produced by blending it with Guarnaccia Bianca, Malvasia Bianca di Candia and Moscatello. In ampelographic terms, it is distinguished by its pale berries and its ability to produce intensely fragrant grapes; the bunch, berry and leaf are characteristic of Mediterranean white grape varieties, which are particularly valued for their suitability for drying and the resulting concentration of aromas. Its cultivation area remains confined to the Pollino region of Cosenza, with a long history of cultivation around Saracena and in neighbouring territories. The wine produced from it, generally a blend, displays hues ranging from golden to amber, with aromas of flowers, ripe fruit, honey, raisins and delicate spicy notes. On the palate, it is sweet, enveloping and well-structured, underpinned by a pleasant aromatic profile and a long finish. The concentration achieved during the drying process promotes good ageing potential. The most significant oenological curiosity lies in the role of Addoraca as a fragrant element in the traditional recipe for Moscato di Saracena, capable of contributing to its complexity without losing its connection to the Mediterranean character of the region.
