Vitovska is a traditional white grape variety from the Karst region, which today straddles the border between Friuli Venezia Giulia and the Slovenian coast, where it is also known as Vitouska, Vitovska Grganja or Garganja. Its history is deeply linked to the border regions of the Trieste and Gorizia Karst, the Vipacco Valley and the Kras, areas where viticulture has developed on calcareous, stony and poor soils, shaped by the wind and the presence of the Bora. The leaf is generally large, pentagonal and five-lobed, with a tomentose underside and a petiole often tinged with red; the bunch is large, pyramidal, winged and compact, whilst the berry, of medium size and spherical in shape, has a yellowish-green, pruinose and firm skin. The white wine produced is characterised by a straw-yellow colour, good freshness and a full-bodied structure, underpinned by a distinct savoury quality. On the nose, it offers aromas of pear, ripe citrus fruits, white flowers, aromatic herbs and mineral undertones, evolving towards notes of honey and spices. The more ambitious versions demonstrate remarkable ageing potential and complexity over time. Also of interest is the skin-contact vinification practised by several producers in the Karst region, which accentuates intensity, depth and longevity, resulting in wines with golden or amber hues and a more complex flavour profile.
