Cantina di Fregona
Cantina di Fregona is associated with one of the most distinctive wines of the upper Marca Trevigiana: the Colli di Conegliano DOCG, specifically the Torchiato di Fregona variety. Its natural setting is the hills between Fregona, Sarmede and Cappella Maggiore, at the foot of the Cansiglio Plateau, where breezes, temperature variations and distinct seasons help to define the character of the local white grapes. In this setting, the wine is crafted from a strongly regional grape variety heritage, centred on Glera, Verdiso and Boschera, the latter also recognised as a native variety particularly suited to drying.
The winemaking philosophy centres on upholding time-honoured and meticulous production methods. The grapes are carefully selected, laid out in a single layer and left to dry for an extended period before being pressed repeatedly; the must then undergoes slow fermentation and prolonged ageing in oak. It is an approach that relies heavily on time, the microclimate and the quality of the raw material, avoiding technical shortcuts that would alter the traditional profile of Torchiato.
The result is a sweet, smooth and velvety style, yet underpinned by the freshness and aromatic character of the local grapes. Cantina di Fregona thus interprets passito not merely as a wine, but as a cultural expression of a specific hilly area, where the environment, the appellation and the winemaking heritage remain closely intertwined.
