Fattorie Vallona
Fattorie Vallona is a wine-producing estate in the Colli Bolognesi, in Fagnano, within the municipality of Castello di Serravalle, which is now part of Valsamoggia. Its identity stems from an artisanal approach and a close connection with the Bolognese hills, an area historically suited to viticulture and falling within the Colli Bolognesi and Colli Bolognesi Pignoletto appellations. In this hilly landscape, characterised by exposures, altitudes and soils that lend the grapes character and distinctiveness, Pignoletto plays a central role, alongside white and red varieties that have long been cultivated in the area.
The winemaking philosophy prioritises an understanding of individual vineyards and the pursuit of wines with a distinct character, avoiding standardised interpretations. A distinctive feature is the focus on plant material, involving the use of cuttings from old vines and the idea of reviving, in a contemporary way, the coexistence of different grape varieties within the same vineyard. In the cellar, the winemaking process guides the wine through carefully calibrated stages involving stainless steel, concrete, wood and glass, distinguishing the period of ageing from that of development.
The result is a style that seeks precision, depth and a true reflection of the terroir: whites that express freshness, aromas and structure; reds characterised by balance and maturity; with Pignoletto interpreted not only in its most fragrant, immediate form, but also as a grape variety suited to more complex and long-lived expressions.
