Producers/ Le Salette
Le Salette
Le Salette is a Veneto-based producer based in Fumane, in the heart of the Valpolicella Classica, where the identity of its wines stems from the interplay between native grape varieties, the Veronese hills and the tradition of grape drying. Work in the vineyard focuses on Corvina, Corvinone, Rondinella, Molinara, Oseleta and Croatina – varieties that form part of the appellation’s historical heritage and enable a consistent interpretation of Valpolicella, Amarone and Recioto. The vineyards are situated in various areas of Fumane, with Cretaceous soils containing clay, gravel and mineral components that help to define the ripening profile and structure of the grapes. The breeze from the side valleys promotes a cool, dry environment, which is particularly important in a region where the health of the grapes is crucial, not least for the processes involved in grape drying. The stated approach to viticulture prioritises sustainable practices that respect natural cycles, without forcing the vine, with the aim of preserving the unique character of the soils and the distinctive identity of Valpolicella. In the cellar, the style appears geared towards a clear expression of the terroir: ripe but not generic fruit, a spicy texture, depth and a structure that is rooted in balance rather than mere concentration. The result is a classic and precise expression of Valpolicella, capable of uniting local heritage, indigenous raw materials and a winemaking approach attentive to the continuity of the terroir.
