Fattoria di Bacchereto - Terre a Mano
Fattoria di Bacchereto’s Vin Santo di Carmignano is a passito wine produced from Trebbiano Toscano and Malvasia del Chianti grapes grown biodynamically in a small vineyard of about one and a half hectares on clay-limestone soil. After the grapes are dried on reed mats in well-ventilated areas for 3 to 4 months, they are lightly pressed, and the resulting must ferments naturally and repeatedly with indigenous yeasts in chestnut barrels for 4 to 5 months. The wine is aged in the same barrels, a process that can last from 5 to 10 years before bottling. With a bright amber-yellow color, the wine offers a complex bouquet of honey, caramel, chestnuts, dried fruit, figs, and apricots. On the palate, its velvety sweetness is balanced by excellent freshness. Traditionally paired with Cantucci di Prato, it also lends itself to being enjoyed on its own as a meditation wine.Read more
