Caldaro is one of the most recognisable wine-growing areas in the Val d’Adige, stretching between the slopes of the Mendola and Lake Caldaro, amidst a landscape of terraced hills, historic vineyards and small farmsteads. The climate combines Alpine and Mediterranean influences: bright, mild days, the Ora breeze blowing in from Lake Garda and cool night-time air currents promote balanced ripening, resulting in distinct aromas, good freshness and an elegant structure.
The geology is particularly diverse. The soils contain volcanic porphyry, limestone associated with the Mendola mountains, and morainic and alluvial deposits left behind by the ice ages; this results in a mosaic of soil types, ranging from gravelly, well-drained soils to those that are more clayey and rich in limestone.
Local tradition centres on Schiava, the base wine for Kalterersee – a fragrant, light and approachable red – but the region also produces Lagrein, Pinot Noir, Merlot and Cabernet. At cooler altitudes, Pinot Bianco, Chardonnay, Sauvignon, Gewürztraminer and Moscato Giallo thrive. Cultivation still combines the traditional pergola system with espalier training; manual harvesting and grape selection are complemented by winemaking techniques designed to bring out the distinct identity of the various vineyards.
