Novacella is situated in the northern part of the Isarco Valley, around the abbey of the same name, in a high-altitude wine-growing landscape where the vineyards occupy well-exposed slopes, generally facing south and south-west, at an altitude of between approximately 600 and 900 metres. The cool climate, characterised by significant temperature variations between day and night, promotes slow and gradual ripening, preserving acidity, bouquet and aromatic finesse.
The soils consist mainly of glacial moraine deposits; they are poor, permeable and rich in mineral components such as mica schist, paragneiss and quartzite. This soil composition contributes to the wines’ structural tension and pronounced minerality. The grape varieties are predominantly white and include Sylvaner, Kerner, Müller-Thurgau, Grüner Veltliner, Riesling, Pinot Grigio, Gewürztraminer and Pinot Bianco. This yields clean, fragrant and well-structured wines, with notes of fresh fruit, aromatic herbs and a lively finish.
Viticulture requires constant attention: pruning, canopy management and harvesting are often carried out by hand, in accordance with the characteristics of each individual plot. In the cellar, fermentation and ageing in stainless steel are favoured, sometimes complemented by the use of acacia or oak barrels. The local winemaking tradition has its roots in the thousand-year history of Novacella Abbey, which has been producing wine since 1142.
