San Severo is situated in the northern part of the Tavoliere delle Puglie, in a predominantly flat landscape where vineyards sit alongside olive groves, arable land and farmsteads. The hot, dry climate, tempered by breezes from the Adriatic and the proximity of the Gargano, promotes the even ripening of the grapes and helps to preserve their balance and freshness. The soils, of sedimentary origin and characterised by varying textures, offer favourable conditions for both white and red grape varieties.
The area’s oenological identity centres on a diverse range of grape varieties. Bombino Bianco, together with Trebbiano Bianco, forms the basis of the white wines, whilst Malvasia Bianca di Candia and Falanghina broaden the range of varietal expressions. For red and rosé wines, the production regulations place particular emphasis on Montepulciano and Sangiovese, alongside Uva di Troia, Merlot and Malvasia Nera. The appellation encompasses white, red and rosé wines, as well as Novello, Riserva, semi-sparkling and sparkling wines.
The local tradition is also characterised by the presence of underground cellars, naturally cool environments used for storage and ageing. Recognised in 1968, the San Severo DOC reflects a well-established wine-growing culture, based on the adaptation of grape varieties to the Daunia climate and on winemaking practices designed to highlight the region’s distinctive character.
