Bisson
Bisson is a Ligurian producer with links to Chiavari and the wine-growing landscape of the Tigullio, an area where the vines thrive amidst slopes, sea breezes and a strong Mediterranean character. Its identity stems from a focus on the region’s traditional grape varieties and a deeply territorial approach to the raw material, with particular attention paid to indigenous white grapes and varieties historically cultivated between the coast and the hinterland. In this context, Bianchetta Genovese, Vermentino, Pigato and other Ligurian grapes contribute to wines with a fresh, savoury and instantly recognisable profile, characterised by the proximity of the sea and the fragmented nature of local viticulture.
The winery has also made a name for itself through its research into the underwater ageing of the Metodo Classico: the bottles are placed on the seabed off Portofino, where the depth, constant temperature, darkness and pressure create unique natural conditions for maturation. This technical choice, which has become one of the producer’s most recognisable features, is not merely a showy gesture, but a logical extension of its relationship with the Ligurian Sea.
The wines’ style emphasises tension, aromatic finesse and a mineral quality, with expressions that maintain a clear link to their territory of origin. This is how Bisson interprets Liguria: through a combination of local tradition, a focus on indigenous grape varieties and measured experimentation, helping to raise the profile of a complex coastal viticulture with a strong sense of identity.
