Ermes Pavese
Ermes Pavese is a producer from the Aosta Valley with links to the Morgex and La Salle area in the upper Aosta Valley, where viticulture thrives at the foot of Mont Blanc in an extreme Alpine environment with a strong sense of identity. The business was founded in 1999 and finds its true expression in Prié Blanc, a native white grape variety grown in this area and the basis of the Valle d’Aosta PDO ‘Blanc de Morgex et de La Salle’ designation. The vineyards are situated at altitudes of between approximately 900 and 1,200 metres, on sandy mountain soils, in an environment characterised by significant daily temperature fluctuations, intense sunlight and harsh climatic conditions. The low pergola trellis, traditional to the area, helps to protect the grapes from the harsh night-time temperatures and reflects a precise agricultural adaptation to the high-altitude landscape. The management of the raw material prioritises manual harvesting and careful processing, with grape pressing and controlled fermentation; ageing in stainless steel allows the character of the grape variety and the terroir to shine through clearly. The wines’ style is recognisable for its freshness, mineral tension and refined aromatic profile, with hints of flowers, mountain herbs, white fruits and a subtle spicy note. In this way, Ermes Pavese embodies a form of viticulture practised on the fringes – essential and consistent – capable of giving voice to one of the highest and most distinctive wine-growing landscapes in the Italian Alps.
