Vinification and ageing:Spontaneous fermentation with maceration on the skins, without temperature control, in open wooden vats with multiple daily punching-downs. Conducting malolactic fermentation in large oak barrels. Aging in medium and large Slavonian oak barrels for 2 years. No clarification or filtration.
