Aurisina embodies the most distinctive character of the coastal Karst, in a hilly landscape overlooking the Gulf of Trieste, where viticulture is shaped by limestone rock, red soil and significant temperature fluctuations caused by the proximity of the sea. The soils, thin and rich in iron, extend amongst stony outcrops and karstic cavities, promoting concentrated ripening and a pronounced mineral character. The bora wind helps to keep the environment dry and well-ventilated, whilst the sea light enhances the aromatic definition and freshness of the grapes.
The local grape variety heritage centres primarily on Vitovska, Istrian Malvasia and Terrano, alongside other varieties permitted under the Carso appellation. Vitovska produces taut, savoury and deep whites, with citrus, floral and herbaceous notes; Istrian Malvasia is characterised by a dry, Mediterranean and persistent profile; Terrano, on the other hand, enhances the lively acidity and spicy character of Karst Refosco. Winemaking practices include fermentation in stainless steel, ageing in wood or neutral containers and, depending on the producer’s style, skin contact which accentuates structure, complexity and ageing potential. Aurisina’s winemaking tradition stems from a rural borderland culture, still evident in the manual care of the vineyards and the precise understanding of each plot.
