Cavaion Veronese enjoys a privileged location between the eastern shore of Lake Garda, the morainic hills and the Adige Valley. The vineyard landscape stretches across gentle slopes, with varying altitudes and exposures, from the foothills of Monte Moscal to the hilly areas near Monte San Michele. The mild climate, influenced by the lake and the air currents sweeping through the Garda amphitheatre, encourages the grapes to ripen gradually, preserving their freshness and aromas.
The soils, of morainic origin and characterised by clay, limestone and pebbles, offer favourable conditions for a diverse range of viticulture. The local tradition is linked above all to the red grape varieties of the Garda area, with Corvina, Rondinella and Molinara producing fragrant, smooth and vibrant wines. This area is home to Bardolino – including the Classico version – Chiaretto and the more structured interpretations of Bardolino Superiore. Alongside these wines, the Garda appellation also showcases white and red grape varieties, including Garganega, Chardonnay, Pinot Grigio, Sauvignon and Merlot.
Winemaking techniques generally focus on enhancing the wines’ aromatic profile and drinkability, through fermentation in stainless steel, carefully controlled maceration and, for the more ambitious wines, ageing processes designed to integrate structure, balance and terroir.
