Custoza lies to the south-west of Lake Garda, on the gentle hills of the morainic amphitheatre formed by Pleistocene glacial deposits. The vineyard landscape comprises elongated ridges, gravelly plains and highly variable soils, which are generally loose, rich in skeletal material and characterised by a predominantly calcareous composition. The good drainage of the soils and the presence of smooth pebbles help maintain the vines’ water balance, whilst the limestone matrix contributes to the wines’ savoury character and minerality.
The proximity of Lake Garda moderates the winters and makes for hot but not stifling summers. The daily temperature range helps to preserve acidity and supports the full ripening of the grapes, enhancing their aromas and freshness. The appellation is distinguished by a diverse viticultural mix, based on a combination of local and historically introduced varieties: Garganega, Trebbianello, Trebbiano and Bianca Fernanda form the core of the characteristic blend, complemented by Malvasia, Riesling, Pinot Bianco, Chardonnay and Incrocio Manzoni.
The separate vinification of the different grapes allows their individual characteristics to be highlighted before blending. The result is floral and fruity white wines that are fresh, savoury and delicately aromatic, capable of developing greater complexity, ripe nuances and mineral depth as they age. Alongside the still version, the region also produces Superiore, Riserva, Spumante and Passito wines.
