Tufo is situated in the middle reaches of the River Sabato valley, in a hilly landscape characterised by well-exposed slopes and the presence of Monte Gloria. Here, viticulture takes place on clay-limestone soils, characterised by mineral components and a marked presence of sulphur, a geological feature that contributes to the distinctiveness of the area. The Mediterranean climate, tempered by the altitude, the undulating terrain and the surrounding woodland, favours the gradual ripening of the grapes and significant daily temperature variations in summer, which are vital for preserving freshness, aromas and flavour definition.
The area’s signature grape variety is Greco, alongside Coda di Volpe Bianca in the wines produced in accordance with the appellation regulations. The range of wines includes still white wines with a crisp structure, savoury notes and a mineral profile, as well as sparkling wines produced by secondary fermentation in the bottle using the classic method. The winemaking process highlights the acidity, aromatic depth and ageing potential of the grapes, whilst longer ageing periods enhance complexity and harmony. Tufo’s winemaking history is also linked to the ancient sulphur mining industry, a presence that has shaped the landscape, the local culture and the agricultural identity of the village.
