Olevano Romano lies in the hills of the upper Sacco Valley, on the slopes of the Simbruini Mountains, in a wine-growing landscape characterised by valleys, slopes and altitudes ranging roughly from 211 to 571 metres. The predominantly west and south-west-facing slopes create a bright, airy and naturally well-drained environment. The temperate climate, characterised by abundant rainfall, relatively dry summers, good autumn sunshine and significant temperature variations between day and night, facilitates the gradual ripening of the grapes and contributes to the aromatic and structural character of the wines.
The geology is equally complex: organogenic and detrital limestones, clayey marls, alternating layers of clay and sandstone, as well as Quaternary volcanic rocks, form soils that are often red, clay-loamy and shallow, capable of enhancing vigour and complexity. The grape variety portfolio centres on Cesanese di Affile and Cesanese Comune, alongside other red grape varieties permitted by the appellation regulations. The DOC designation includes dry, semi-sweet, sweet, sweet sparkling, Superiore and Riserva styles: wines with floral and fruity aromas, with hints of cherry, spices and vegetal notes, ranging up to more structured and velvety expressions. Local viticulture, documented since Roman times and already regulated by the Statutes of 1364, preserves traditional practices of vine training, canopy management, red wine vinification and ageing.
