Aymavilles occupies a prominent position in the upper Aosta Valley, on the right bank of the Dora Baltea, at the mouth of the Cogne Valley, at an altitude of approximately 646 metres. The vineyards stretch across the slopes and terraces surrounding the castle, in a bright, dry and breezy alpine environment, characterised by short summers, cool nights and marked temperature variations in autumn. These conditions favour the gradual ripening of the grapes and a distinct aromatic profile.
The local geology is particularly varied: morainic and sandy soils predominate, often loose, poor in nutrients and rich in stone, with a granitic matrix and excellent drainage. The slopes and fragmented layout of the vineyards make manual labour essential, traditionally carried out on terraces using the espalier and simple Guyot training systems.
The ampelographic heritage includes numerous indigenous Aosta Valley grape varieties, including Petit Rouge, Fumin, Cornalin, Mayolet and Prëmetta, alongside Petite Arvine, Chardonnay, Pinot Noir, Pinot Grigio, Gewürztraminer and Syrah. The wines express, above all, tension, freshness and finesse, ranging from the traditional Torrette reds to varietal expressions and contemporary blends. The presence of historic wineries, cooperatives and family-run estates keeps alive a winemaking heritage based on the celebration of the terroir and heroic mountain viticulture.
